Coconut Almond Energy Balls are the perfect healthy snack for a quick energy boost. Combining the rich flavor of coconut with the crunch of almonds, these bite-sized treats are easy to make, portable, and packed with nutrients. They’re a wholesome alternative to processed snacks—great for work, workouts, or on-the-go snacking.
1 cup almonds (raw or roasted)
1 cup shredded coconut or coconut flakes
½ cup almond butter
⅓ cup honey or maple syrup
1 cup rolled oats
Optional: 1 tbsp chia seeds or goji berries
Optional: ¼ tsp vanilla extract or cinnamon
Pinch of salt (to taste)
Roast almonds (optional): Preheat the oven to 350°F (175°C). Roast almonds for 10–12 minutes until golden brown, then let them cool.
Prepare ingredients: Chop dates (if using), measure all dry and wet ingredients.
Mix: In a mixing bowl or food processor, combine almonds, oats, coconut, almond butter, and honey. Blend or stir until the mixture sticks together.
Adjust consistency: If too dry, add a bit more honey or almond butter; if too wet, add more oats or coconut flakes.
Shape: Roll mixture into small 1-inch balls using your hands or a scoop.
Coat (optional): Roll balls in shredded coconut, chopped nuts, or cocoa powder.
Chill: Place in the fridge for at least 30 minutes before serving.
Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.
Customize with protein powder, dried fruits, or spices.
For stronger almond flavor, use both almond butter and chopped almonds.
