These Crispy Baked Zucchini Chips are the perfect healthy alternative to potato chips! Light, crunchy, and full of flavor, they make guilt-free snacking easy. Made from fresh zucchini and your favorite seasonings, these chips are low in calories, rich in vitamins, and fit perfectly into keto, vegan, or paleo diets. 2 medium zucchinis (6–8 inches long)
1 tbsp olive oil (or avocado oil for extra crispiness)
½ tsp salt
¼ tsp black pepper
½ tsp garlic powder (optional)
¼ tsp paprika (optional)
Italian Style: Add ½ tsp dried oregano and ¼ tsp Parmesan cheese
Spicy Kick: Add ¼ tsp chili powder or crushed red pepper flakes
Sweet & Spicy: Mix ½ tsp honey with ¼ tsp cayenne pepper
Preheat Oven:
Set your oven to 225°F (110°C). Line a large baking sheet with parchment paper or place a wire rack on top for better airflow.
Prepare the Zucchini:
Wash and dry the zucchinis thoroughly. Slice them into thin, even rounds (about 1/16–⅛ inch thick) using a mandoline slicer or sharp knife.
Remove Moisture:
Lay slices on paper towels and sprinkle with a bit of salt. Let them sit for 10–15 minutes to draw out moisture, then pat dry.
Season the Slices:
In a bowl, toss zucchini slices with olive oil, salt, pepper, and any desired seasonings until evenly coated.
Arrange for Baking:
Spread slices in a single layer on the prepared baking sheet. Avoid overlapping — air circulation is key for crispiness.
Bake Until Crisp:
Bake for 2–3 hours, flipping once halfway through, until golden brown and crisp. Watch closely during the last 20 minutes to prevent burning.
Cool & Serve:
Remove from oven and let chips cool completely — they’ll crisp up more as they cool. Enjoy immediately or store for later.
