Ingredients

For the Steak Bites:

  • 1½ lbs (700 g) sirloin, ribeye, or filet mignon — cut into 1-inch cubes

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika

  • ¼ tsp chili flakes (optional)

  • 1 tbsp olive oil or avocado oil (for searing)

For the Garlic Butter Sauce:

  • ½ cup (1 stick) unsalted butter, softened

  • 3–4 cloves garlic, minced

  • 1 tbsp fresh parsley, chopped

  • 1 tsp dried thyme (or 2 sprigs fresh)

  • ½ tsp smoked paprika

  • Optional: 1 tsp lemon juice or zest for brightness

Optional Garnishes:

  • Fresh herbs (parsley, thyme, or chives)
  • Flaky salt and black pepper

Instructions

  • Prepare the Steak:
    Cut the steak into bite-sized cubes (about 1–1.5 inches). Pat them dry with paper towels to remove excess moisture — this helps achieve a perfect sear.

  • Season the Steak:
    In a bowl, toss the cubes with salt, pepper, paprika, and chili flakes until evenly coated. Let them sit at room temperature for 30 minutes to ensure even cooking.

  • Preheat the Skillet:
    Heat a large cast-iron or stainless-steel skillet over medium-high heat. Once hot, add oil and wait for it to shimmer — that’s your signal the pan is ready.

  • Sear the Steak Bites:
    Add the steak pieces in a single layer, making sure not to overcrowd the skillet. Cook for 2–3 minutes on one side without moving them, then flip and cook another 2 minutes for a perfect crust. For medium-rare, remove at 130–135°F internal temperature.

  • Make the Garlic Butter:
    Lower the heat to medium. Add butter to the skillet and let it melt. Stir in minced garlic, parsley, thyme, and smoked paprika. Cook for 30 seconds, just until fragrant.

  • Combine and Toss:
    Return the steak bites to the pan and toss them in the melted garlic butter for 1 minute. Spoon the sauce over the steak pieces to coat them evenly.

  • Serve and Enjoy:

  • Transfer steak bites to a serving plate and drizzle with extra garlic butter from the pan. Garnish with chopped parsley or a sprinkle of flaky salt. Serve immediately.
