Packed with vitamin A, fiber, and antioxidants, they make a guilt-free side dish or snack that everyone will love — from kids to adults.

Ingredients

  • 1 lb (450 g) fresh carrots, peeled and cut into fries or wedges

  • 1 ½ tbsp olive oil

  • 1 tbsp honey (use pure or raw honey for best flavor)

  • ½ tsp garlic powder

  • ¼ tsp smoked paprika (optional)

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp dried thyme or rosemary (optional)

Optional Garnish: Fresh parsley or a sprinkle of sea salt after roasting

Instructions

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.

  • Prepare the carrots: Wash, peel, and cut into even fry-sized sticks or wedges for uniform cooking.

  • Mix the glaze: In a large bowl, whisk together olive oil, honey, garlic powder, salt, pepper, and herbs.

  • Coat the fries: Add the carrot sticks to the bowl and toss until evenly coated.

  • Arrange for roasting: Spread the carrots in a single layer on the baking sheet, leaving space between each fry for crispiness.

  • Roast: Bake for 20–25 minutes, turning halfway through, until the edges are golden and slightly caramelized.

  • Serve: Remove from the oven and drizzle with a touch more honey or sprinkle with fresh herbs if desired. Serve hot with your favorite dip!

Notes

  • Make it vegan: Replace honey with maple syrup or agave nectar.

  • Crispier fries: Space them well and use a preheated baking sheet.

  • Carrot type: Nantes or Imperator carrots give the best texture and natural sweetness.

  • Flavor boost: Add chili flakes or cumin for a spicy-sweet twist.
