Ingredients

Fresh Produce

  • 3 cups corn kernels (fresh or frozen; if fresh, about 4 ears)

  • 1 can (15 oz / 425 g) black beans, drained and rinsed

  • 1 red bell pepper, diced

  • ½ red onion, finely chopped

  • ¼ cup fresh cilantro, chopped

  • Juice of 2 limes

Pantry Staples

  • 2 tbsp olive oil

  • 1 tsp ground cumin

  • ½ tsp chili powder (adjust for heat preference)

  • ½ tsp garlic powder

  • Salt and black pepper, to taste

Optional Add-Ins

  • 1 avocado, diced (for creaminess)
  • 2 tbsp crumbled feta or queso fresco

  • 1 chopped tomato

  • 2 tbsp toasted pumpkin seeds (for crunch)

  • Diced jalapeño or chipotle powder (for extra spice)

Instructions

  • Roast the Corn:
    Preheat oven to 400°F (200°C). Spread corn kernels on a baking sheet. Drizzle with 1 tbsp olive oil, sprinkle with salt, and toss to coat. Roast for 20–25 minutes, stirring halfway, until lightly charred.
    Tip: Grill corn on the cob for a smoky flavor, then slice off the kernels once cooled.

  • Prepare the Veggies:
    While the corn roasts, dice the red bell pepper, chop the onion and cilantro, and juice the limes.

  • Mix the Dressing:
    In a small bowl, whisk together lime juice, 1 tbsp olive oil, cumin, chili powder, garlic powder, salt, and pepper. Adjust seasoning to taste.

  • Combine the Salad:
    In a large bowl, combine roasted corn, black beans, bell pepper, onion, and cilantro. Pour dressing over and toss well until evenly coated.
