This Spicy Roasted Corn & Black Bean Salad is a colorful, flavor-packed dish that’s perfect for summer gatherings or healthy weeknight meals. Sweet roasted corn, hearty black beans, and a zesty lime dressing come together for a salad that’s both nutritious and satisfying. 3 cups corn kernels (fresh or frozen; if fresh, about 4 ears)
1 can (15 oz / 425 g) black beans, drained and rinsed
1 red bell pepper, diced
½ red onion, finely chopped
¼ cup fresh cilantro, chopped
Juice of 2 limes
2 tbsp olive oil
1 tsp ground cumin
½ tsp chili powder (adjust for heat preference)
½ tsp garlic powder
Salt and black pepper, to taste
2 tbsp crumbled feta or queso fresco
1 chopped tomato
2 tbsp toasted pumpkin seeds (for crunch)
Diced jalapeño or chipotle powder (for extra spice)
Roast the Corn:
Preheat oven to 400°F (200°C). Spread corn kernels on a baking sheet. Drizzle with 1 tbsp olive oil, sprinkle with salt, and toss to coat. Roast for 20–25 minutes, stirring halfway, until lightly charred.
