For the Filling:
1 lb ground turkey (preferably lean, organic, or free-range)
1 tablespoon olive oil
1 small onion, diced
1 bell pepper, diced
1 small carrot, shredded
1 clove garlic, minced
Salt and black pepper, to taste
½ teaspoon dried oregano
½ teaspoon garlic powder
1 tablespoon low-sodium soy sauce (optional for extra flavor)
For the Wraps:
1 head Romaine or Butter Lettuce, leaves separated and washed
½ cucumber, thinly sliced
½ cup shredded carrots or chopped bell peppers
Fresh herbs (cilantro, basil, or parsley) for garnish
Optional Sauces:
Greek yogurt–based tzatziki (cool and creamy)
Olive oil and lemon vinaigrette (light and tangy)
Harissa or chimichurri (spicy and aromatic)
Prepare the Lettuce – Wash and dry lettuce leaves thoroughly. Pat dry or use a salad spinner to remove excess moisture. Keep chilled until serving.
Cook the Turkey – Heat olive oil in a skillet over medium-high heat. Add ground turkey and break it apart as it cooks. Stir frequently until evenly browned.
Add Vegetables – Mix in diced onion, bell pepper, carrot, and garlic. Cook for 3–5 minutes until vegetables are tender.
Season the Mixture – Add salt, pepper, oregano, and garlic powder. Stir to combine, tasting and adjusting seasoning as needed.
Assemble the Wraps – Place a spoonful of the turkey and veggie mixture in the center of each lettuce leaf. Top with cucumber slices, shredded carrots, or herbs.
Add Sauce (Optional) – Drizzle lightly with tzatziki, vinaigrette, or your preferred sauce.
Wrap and Serve – Fold the base of the lettuce over the filling, tuck in the sides, and roll tightly. Secure with a toothpick if needed. Serve immediately for maximum crispness.
Meal Prep Tip: Cook the turkey filling up to 3 days in advance and store in the fridge. Reheat before serving.
Keep Lettuce Fresh: Wash and dry leaves ahead of time, store in an airtight container lined with paper towels.
Low-Calorie Sauce Ideas: Use Greek yogurt–based or vinegar-based sauces to add flavor without extra calories.
Dietary Variations: Substitute tofu, tempeh, or chickpeas for a vegetarian or vegan version.
Serving Ideas: Pair with fresh fruit salad, roasted veggies, or quinoa salad for a complete meal.
