Wendy’s Chicken Caesar Fresh Stuffed Pita

At the early part of 1997, Wendy’s launched its variety of cold “Fresh Stuffed” pita sandwiches. This selection is a great change of pace from this normal fast food chain. In general, when you get one of these sandwiches, you’ll be getting a salad enclosed in warm pita bread. You might think that this isn’t worth 3 bucks. But then again, what if you can make this a homemade version of this one on your own? Here’s a cloned recipe for this recipe.

Serves: 4

1/2 c water

1/2 c olive oil

1/3 c white vinegar

2 Tbsp egg substitute

1 Tbsp Romano cheese (grated)

1 Tbsp Parmesan cheese (grated)

1/8 Tsp dry, unflavored gelatin

1/2 Tsp red bell pepper (finely minced)

1/2 Tsp salt

1/4 Tsp garlic powder

1/4 Tsp Worcestershire sauce

1/8 Tsp coarse ground black pepper

A dash of thyme

A dash of basil

A dash of oregano

A dash of parsley

Salt and pepper

2 chicken breasts (boneless & skinless)

6 c chopped romaine lettuce

1/4 c shredded carrot

1/4 c shredded red cabbage

4 pita breads

4 Tsp fresh Parmesan cheese (shredded)

1. First start by preparing the dressing. To do this, dissolve the gelatin in the water. Microwave the mixture on high temperature for about 2 minutes, or until the mixture starts boiling rapidly. Put vinegar then whisk the mixture while putting the oil. Add salt, Worcestershire sauce, bell pepper, garlic powder, oregano, black pepper, basil, parsley and thyme. Cool the dressing for approximately 15 minutes prior to adding the egg substitute and cheeses. Continue whisking the mixture until it becomes a bit thicker then chill it. Chilling the dressing overnight will make it thicker.

2. Preheat an indoor grill or barbecue grill to moderate heat. Sprinkle salt and pepper to the chicken then grill them for about 5 minutes for each side, or until cooked. Take it off from the grill then dice the chicken.

3. While waiting for the chicken to get cooked, start preparing the salad by mixing red cabbage, shredded carrot and romaine lettuce in a large-size bowl. Toss the ingredients.

4. Make the sandwiches by microwaving the pita for about 20 seconds.

5. Fold the pita into two, like a taco. Afterwards, put 1 to 1 and ½ cups of the prepared romaine salad into the pita bread.

6. Add approximately 1/3 cup of chicken (diced) over the salad inside the pita bread.

7. Add about 1 tbsp of the dressing on top of the sandwich.

8. Drizzle about 1 tsp of the shredded Parmesan cheese over each serving then serve.
